The wine is made by re-fermenting an already Superior Valpolicella together with the Amarone marc in a Ripasso vinification which takes place towards the end of February or beginning of March. The Ripasso vinification adds the Amarone colour, sugars and aroma which make this wine unique. A full bodied wine, with a long clean aftertaste and smokey hints.
Winemaker notes: This wine is an example of our efforts to make the most of the typicity of our regions and of our grapes preserving, in the best possible way, the original technique of Ripasso.
Serving temperature: Definitely at room temperature (18°C), like all wines which have been aged for a long time. It benefits from decanting.
